I love Serial Experiment: Lain but haven't seen all the episodes yet.
I think my most favourite manga is Cowboy Bebop

The first serie of Harlock/Herlock/Albator has the best story but the draws looks really old now. But I still watch with the same pleasure the second season which rules !!

Gundam Wing - Slow moving at times but was good when it kicked off!
Ghost in the Shell (both movie and stand alone complex) - *drool*

well vampire hunter d is a must watch, same with hellsing and ninja scrolls. Bleach is good but way too many eps and they tend to poop one out every week.

GT especially the start was ultra crap
Howls Moving Castle is by the same maker of Spirited Away and both are MUST see!! Beautiful fairytale like animes. Maybe no violence but the story and artwork is just awesome.
Gundam wing is a series you must watch from beginning to end cause they tend to switch sides on a minute to minute basis :D You would miss an episode and be like "hey wasn't he on the gundams side just 2 eps ago?"
And can't go wrong with ghost in the shell.
And for my weird moments:

You might enjoy "Air" then. Same fairy tale styled idea with little to no violence in it. Very (as ever) sci-fi theme in some aspects which a hugely involving story line!
Also has some comical aspects too ;)
Dokuro-Chan however is just a violent comedy - and it does hold true to being a comedy! Good watch for anyone with a sense of humour and humour based violence.

I had skipped my list to anime-series only. Of course Miyasaki's movies are ALL must see.
